Mini Chocolate Chip Cookies

In my pursuit to drop some pounds, I have been looking for recipes that reduce the fat but still have the taste that I am looking for. I found this Weight Watchers Mini Chocolate Chip Cookies. They were really easy to make. If you are doing Weight Watchers, the cookies are 1 point each. Mine might be a little more since I added some chopped pecans to them. They were yummy and smelled good when they were baking. I did not tell anyone in my household that they were not regular chocolate cookies..but it did not seem to matter, because they were eaten up.

Ingredients


2 Tbsp butter, softened   
2 tsp canola oil   
1/2 cup(s) packed brown sugar, dark-variety   
1 tsp vanilla extract   
1/8 tsp table salt   
1 large egg white(s)   
3/4 cup(s) all-purpose flour   
1/4 tsp baking soda   
3 oz semi-sweet chocolate chips, about 1/2 cup   

Instructions

  • Preheat oven to 375ºF.
  • In a medium bowl, cream together butter, oil and sugar. Add vanilla, salt and egg white; mix thoroughly to combine.
  • In a small bowl, mix together flour and baking soda; stir into batter. Add chocolate chips to batter; stir to distribute evenly throughout.
  • Drop rounded half-teaspoons of dough onto one or two large nonstick baking sheets, leaving a small amount of space between each cookie. Bake cookies until golden around edges, about 4 to 6 minutes; cool on a wire rack. Yields 2 cookies per serving.

Looks yummy! I don't think anything is better than chocolate chip cookies that are OK for your diet! :)

Love, marriage and then a baby carriage. I am preggers. I am 15 weeks pregnant. I know that it is not fall along, but I wanted to share our blessing on my blog. We are very excited about the little one, that we are currently calling Baby J. I have not had much sickness. I have had periods of nausea, but it is not consistent. I have noticed that my body is changing, as it should. I just guess that I was not expecting my body to change that quick.  As my friend, Bev says, " Your growing a life. What do you expect?" Girl Announcing the arrival of our beautiful baby girl Gabrielle . She arrived a little bit early and kinda unexpectedly but well timed. She arrived on February 3, 2012 at 8:05 am.
