Mini Chocolate Chip Cookies

In my pursuit to drop some pounds, I have been looking for recipes that reduce the fat but still have the taste that I am looking for. I found this Weight Watchers Mini Chocolate Chip Cookies. They were really easy to make. If you are doing Weight Watchers, the cookies are 1 point each. Mine might be a little more since I added some chopped pecans to them. They were yummy and smelled good when they were baking. I did not tell anyone in my household that they were not regular chocolate cookies..but it did not seem to matter, because they were eaten up.

Ingredients


2 Tbsp butter, softened   
2 tsp canola oil   
1/2 cup(s) packed brown sugar, dark-variety   
1 tsp vanilla extract   
1/8 tsp table salt   
1 large egg white(s)   
3/4 cup(s) all-purpose flour   
1/4 tsp baking soda   
3 oz semi-sweet chocolate chips, about 1/2 cup   

Instructions

  • Preheat oven to 375ºF.
  • In a medium bowl, cream together butter, oil and sugar. Add vanilla, salt and egg white; mix thoroughly to combine.
  • In a small bowl, mix together flour and baking soda; stir into batter. Add chocolate chips to batter; stir to distribute evenly throughout.
  • Drop rounded half-teaspoons of dough onto one or two large nonstick baking sheets, leaving a small amount of space between each cookie. Bake cookies until golden around edges, about 4 to 6 minutes; cool on a wire rack. Yields 2 cookies per serving.

Looks yummy! I don't think anything is better than chocolate chip cookies that are OK for your diet! :)

Wedded Wednesday: Thanksgiving Traditions

With the holidays coming,  I am thinking about how I want to spend them with the hubby. We do the same thing every year for Thanksgiving and make a road trip to spend it with his family. I usually go shopping on the day after Thanksgiving starting at 3:00am and usually come home and sleep the rest of the day. I was looking at starting some sort of new traditions on the Saturday after Thanksgiving that we can do for years to come. Maybe like putting up the Christmas tree (this is my vote), taking an annual holiday photo, doing some shopping together or maybe doing something relaxing like getting a couples massage. Of course, we will have to throw in some football and lots of left overs whatever we decide to do.Building new traditions, will be the traditions that will continue in our family  and define the holidays for years to come.  Do you have any Thanksgiving traditions?
